L’Exquis Herve Remoudou is a soft, washed-rind cheese made from cow’s milk. Like Herve Piquant, Remoudou is aged for 8 weeks, during which time it is turned and rubbed by hand. What sets it apart from other Herve cheeses is its creamier, richer milk.

Remoudou is a Herve cheese with a special history. In the 19th century, in order to hide the actual quantity of milk drawn from the cows from the taxman, the cows were not milked all the way through at the first milking. A 1st milker would draw only the lower milk from the cow’s udder. A second person would come in to re-milk (“rimoude” in Liège Walloon). This second milking produced rich, creamy milk. Remoudou was born!
