With its very salty and aromatic taste, Brussels cheese is a traditional cheese with 0% fat, which is unique in the world of mature cheeses.

Making this cheese takes time. It takes 8 weeks to mature, during which time the cheese is regularly washed in salt water and turned over. And that’s not all: the maturing process continues in the packaging.

A little background… When the last two Brussels cheese producers couldn’t find anyone to take over their business, they asked our dairy to take over the production of this traditional cheese. Since 2008, we’ve been making Brussels cheese using the same methods, and we’re proud of it.
